Helena Cristina Ferrer Carneiro
Graduated in Food Engineering from Universidade Federal de Viçosa (2009) and Master's in Food Engineering from Universidade Estadual de Campinas (2011). Over the past 7 years, she has been focused on developing and improving new matrices for Emulsions and Spray Dryer, in addition to studying the shelf-life of aromas. She is currently the Technology Manager at Symrise Aromas e Fragrances and a PhD student at the State University of Campinas.

Mariana Pereira
pHD student in Food Engineering (DEA/Unicamp) since 2019. She is Food Engineer (UFVJM, 2018) and MSc. in Food Science and Technology (UFVJM, 2019). She is working in the development gel beads by jet cutter for application in gummy candies with supervision of Profa. Dra. Ana Silvia Prata (DEA/UNICAMP) and co-supervision of Dra. Izabela Dutra Alvim (Cereal Chocotec/ ITAL).

Francisco Lucas Chaves Almeida
Francisco Lucas Chaves Almeida is a Ph.D. student in the Bioenergy Program at the University of Campinas (UNICAMP) and is supervised by Dr. Marcus Forte and Co-supervised by Dra. Ana Silvia Prata. His research is focused on biofuels. He studs lipase immobilization by dripping and jet cutter for biodiesel production.Lucas holds an undergraduate degree in Agroindustry (from the Federal University of Paraiba - 2018) and training as a Food Technician (from the Federal Institute of Education, Science and Technology of Rio Grande do Norte – 2014). During his undergraduate studies, he researched several areas, with emphasis on fermentation and storage of alcoholic beverages.
